Os negócios de alimentação, especialmente de pequeno porte, representam uma opção de negócio preferencial para muitos empreendedores brasileiros, devido a fatores como o baixo nível de investimento e de custos de manutenção, bem como a demanda que cresce, ano após ano, em percentuais superiores à média do mercado. No entanto, como qualquer outra empresa, também sofre as influências da cultura organizacional no seu cotidiano administrativo e operacional. Neste contexto, este artigo, por meio de estudo de caso múltiplo e abordagem quantitativa, analisou o fenômeno da cultura organizacional e revelou a sua influência sobre a gestão dos restaurantes de pequeno porte.
